Try this Healthy Meal for two:

Warm Salmon w/ Snap Peas & Salad

Ingredients:

Coat Salmon w/ garlic and herbs then sear skin side down in fry pan w/ avocado oil on med-high heat. To finish place in 375 oven until barely pink.

  • Two 4 oz. salmon fillets, skin on one side

  • 2 Tbs each fresh mint, dill, Italian parsley press 1/2 on salmon prior to cooking and use rest to garnish the dish

  • 1 clove garlic minced

  • 2 Tbs avocado oil for fry pan

While salmon is in oven saute prepared ingredients below:

  • 1 peach, plum or nectarine sliced

  • 1 cup sweet peas

  • 1 clove garlic minced

  • 1 bunch radishes cut into quarters

  • 1 medium scallion sliced

Server over bed of greens:

  • 1 cup pea vine (optional)

  • 3 cups mixed greens

  • 2 Tbs each fresh mint, dill, Italian parsley press 1/2 on salmon prior to cooking and use rest to garnish the dress with Organic ranch or vegan sour cream
